Ingredients

  • 1 bag (about 12 oz) of tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup cooked ground beef or chicken (optional for vegetarians)
  • 1/2 cup jalapeños, sliced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream
  • 1/4 cup sliced black olives
  • 1 avocado, diced
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. In a Bundt pan, start layering half of the tortilla chips, followed by half of the cheddar and Monterey Jack cheeses. Sprinkle half of the black beans and your choice of protein (if using) evenly over the cheese.
  3. Add a layer of jalapeños, tomatoes, and cilantro. Repeat with the remaining tortilla chips, cheese, beans, and protein.
  4. Place the Bundt pan in the oven and bake for 15-20 minutes, or until the cheese is melted and bubbly. Keep an eye on it to ensure the chips don’t burn.
  5. Once out of the oven, carefully invert the Bundt pan onto a large serving platter. The nachos should hold the Bundt shape.
  6. Top with sour cream, black olives, avocado, a squeeze of lime juice, and a sprinkle of salt and pepper.
