1 pound fresh crab meat
1/2 cup finely chopped green onions
1/4 cup red bell pepper, diced
1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon Old Bay seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
12 egg roll wrappers
Vegetable oil, for frying
Optional: 1/2 teaspoon cayenne pepper for a spicy kick
Instructions
In a large bowl, gently mix the crab meat, green onions, red bell pepper, mayonnaise, Dijon mustard, Old Bay seasoning, salt, black pepper, and lemon juice. If you like a bit of heat, add the cayenne pepper.
Place an egg roll wrapper on a clean surface, with one corner pointing towards you. Spoon about 2 tablespoons of the crab mixture onto the center of the wrapper.
Fold the bottom corner of the wrapper over the filling. Fold in the sides, and roll tightly. Dab a bit of water on the top corner to seal the egg roll. Repeat with remaining wrappers and filling.
Heat vegetable oil in a large skillet over medium-high heat. Once the oil is shimmering, carefully add the egg rolls, frying in batches if necessary. Cook each side for about 2-3 minutes, until golden brown and crispy.
Remove the egg rolls with a slotted spoon and drain on paper towels. Serve hot with your favorite dipping sauce.
