Learn how to make delicious Easy Italian Love Cake Recipe. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 box of chocolate cake mix (plus ingredients needed to prepare it)
  • 2 pounds of ricotta cheese
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 (3.9 oz) box of instant chocolate pudding mix
  • 1 cup cold milk
  • 1 container (8 oz) of whipped topping, thawed

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish. This is the same size my family used for all our favorite casseroles, ensuring everyone got a generous slice.
  2. Prepare the chocolate cake mix according to package instructions and pour the batter into the prepared baking dish.
  3. In a large bowl, beat together the ricotta cheese, eggs, sugar, and vanilla extract until smooth and creamy. This reminds me of the times I spent with my abuela, where we’d mix ingredients by hand, savoring each step.
  4. Spoon the ricotta mixture evenly over the chocolate cake batter. It will sink as it bakes, creating a delightful layered effect.
  5. Bake in the preheated oven for about 50-60 minutes, or until the cake is set. You’ll know it’s ready when a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool completely on a wire rack. Meanwhile, prepare the pudding layer by mixing the chocolate pudding mix with cold milk until thickened.
  7. Spread the pudding over the cooled cake, followed by a layer of whipped topping. This is where the cake gets its signature love—each layer adding its own magical touch.
  8. Chill the cake in the refrigerator for at least 1-2 hours before serving, allowing all the flavors to meld beautifully.
