- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped green onions
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg, beaten
- 1 cup breadcrumbs (panko works well for extra crunch)
- Oil for frying (vegetable or canola)
If you’re out of cheddar, feel free to experiment with other cheeses like mozzarella or even a spicy pepper jack for a kick. The versatility is one of my favorite aspects of this recipe!
Instructions
- In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, green onions, garlic powder, salt, and black pepper. Mix well until all ingredients are evenly distributed.
- Add the beaten egg to the mixture and stir until fully incorporated. This will help bind everything together.
- Using your hands, shape the mixture into small balls, roughly the size of a golf ball. Roll each ball in the breadcrumbs, ensuring a nice even coating.
- Heat about 2 inches of oil in a deep skillet or saucepan over medium heat. Test the oil with a small piece of potato mixture; if it sizzles and turns golden, the oil is ready.
- Fry the puffs in batches, being careful not to overcrowd the pan. Cook each batch for about 3-4 minutes, turning occasionally, until they are golden brown and crispy.
- Remove with a slotted spoon and drain on paper towels to remove excess oil.
- Serve hot, garnished with extra chopped green onions if desired.
