Ingredients
- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (16 ounces) refried beans
- 1 package (8 ounces) cream cheese, softened
- 1 cup sour cream
- 2 cups shredded cheddar cheese, divided
- 1 can (10 ounces) diced tomatoes with green chilies, drained
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Optional: Jalapeños for extra heat
If you’re feeling adventurous, you can swap out the ground beef for turkey or even plant-based meat alternatives. It’s all about making the dish your own, much like how my grandmother taught me to cook with intuition and love.
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef until browned and cooked through, about 7-8 minutes. Drain excess fat.
- Stir in the taco seasoning and a splash of water, cooking for another 2 minutes until well combined.
- In a mixing bowl, combine the refried beans, cream cheese, and sour cream. Stir until smooth.
- Add the cooked beef mixture to the bowl, along with 1 cup of shredded cheddar cheese, diced tomatoes with green chilies, and salt and pepper to taste. Mix until fully integrated.
- Transfer the mixture to a baking dish, spreading evenly. Top with the remaining cheddar cheese.
- Bake uncovered for 25-30 minutes or until the cheese is melted and bubbly.
- Garnish with chopped green onions and jalapeños, if using. Serve hot with tortilla chips or your favorite dippers.
As I watched my abuela cook, I learned that patience is vital in the kitchen. Allow the dip to rest for a few minutes before serving to enhance its flavors.
