Ingredients
- 4 boneless, skinless chicken breasts
- 1/3 cup hot honey
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
- Juice of 1 lemon
If you don’t have hot honey, you can make your own by combining 1/3 cup of honey with 1/2 teaspoon of red pepper flakes. And if feta isn’t your cheese of choice, goat cheese or even ricotta would be lovely alternatives.
Instructions
- Preheat your oven to 375°F (190°C). Line a baking dish with parchment paper for easy cleanup.
- In a small bowl, combine the hot honey, olive oil, smoked paprika, garlic powder, salt, and pepper. Mix until well combined.
- Place the chicken breasts in the prepared baking dish. Pour the honey mixture over the chicken, making sure each piece is well coated. My abuela always said to ‘love your food’—this means making sure every inch is covered with flavor!
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove the dish from the oven and sprinkle the crumbled feta evenly over the chicken. Return to the oven for an additional 5 minutes, allowing the cheese to soften and meld with the honey glaze.
- Once finished, remove from the oven and squeeze fresh lemon juice over the chicken. Garnish with chopped parsley before serving.
Pro tip: If you want a bit more caramelization, broil the chicken for the last 2 minutes of cooking under high heat. But keep an eye on it, as the honey can quickly go from golden to burnt!
