Ingredients

  • 1 ½ pounds boneless, skinless chicken thighs

  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 4-6 pita breads
  • 1 cup tzatziki sauce
  • 1 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • Feta cheese, crumbled (optional)

Instructions

  1. In a large bowl, combine 3 tablespoons of olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Stir well to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.
  3. Preheat your grill or stovetop grill pan over medium-high heat. Brush with the remaining olive oil.
  4. Grill the chicken for 5-6 minutes on each side, or until fully cooked and slightly charred. Remove from heat and let rest for a few minutes.
