Ingredients
1 ½ pounds boneless, skinless chicken thighs
4 tablespoons olive oil, divided
3 tablespoons fresh lemon juice
4 cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper, to taste
4-6 pita breads
1 cup tzatziki sauce
1 red onion, thinly sliced
1 cup cherry tomatoes, halved
1 cup cucumber, sliced
Feta cheese, crumbled (optional)
Instructions
In a large bowl, combine 3 tablespoons of olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper. Stir well to create a marinade.
Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.
