Ingredients

  • 12 eggroll wrappers
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 3 jalapeños, seeds removed and finely chopped
  • 2 green onions, chopped
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Instructions

  1. In a large mixing bowl, combine the cream cheese, cheddar cheese, cooked bacon, chopped jalapeños, and green onions. Stir in the garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until everything is well incorporated.
  2. Place an eggroll wrapper on a clean surface with one corner pointing towards you, like a diamond shape. Spoon about 2 tablespoons of the filling in the center of the wrapper.
  3. Fold the bottom corner over the filling, then fold in the sides. Roll the wrapper up tightly, sealing the top corner with a dab of water to ensure it sticks.
  4. Repeat with the remaining wrappers and filling.
  5. In a deep skillet, heat about 2 inches of vegetable oil over medium-high heat. Test the oil by dropping a small piece of wrapper in; it should sizzle and rise to the surface.
  6. Carefully add a few eggrolls to the hot oil, being cautious not to overcrowd the pan. Fry for about 3-4 minutes, turning occasionally, until they are golden brown and crispy.
  7. Remove the eggrolls with a slotted spoon and drain on a paper towel-lined plate.
  8. Allow to cool slightly before serving, as the filling will be hot.
