- Preheat your oven to 375°F and line a baking sheet with parchment paper. This ensures easy cleanup and prevents sticking.
- In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg. This dry mix forms the base of your fritters.
- In a separate bowl, beat the eggs and add the melted butter, milk, and vanilla extract. Stir until well combined.
- Combine the wet ingredients with the dry ingredients, mixing until just incorporated. Avoid overmixing to keep the fritters tender.
- In a small bowl, toss the diced apples with lemon juice to prevent browning. Fold the apples (and nuts, if using) into the batter.
