Ingredients
Gathering the right ingredients is the first step toward culinary success. Here’s what you’ll need:
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- Salt and pepper to taste
- 3 cloves garlic, minced
- 2 cups fresh spinach leaves
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 8 ounces fettuccine pasta
- 1/4 cup breadcrumbs (for topping)
- 2 tablespoons butter, melted (for topping)
If you’re feeling adventurous, swap the chicken for shrimp or add a bit of crushed red pepper for a spicy kick!
Instructions
- Preheat your oven to 375°F (190°C), ensuring it’s a warm, inviting environment for your dish.
- In a large skillet over medium heat, add the olive oil. Once shimmering, add the chicken pieces. Season with salt and pepper and cook until golden brown, about 5-7 minutes. Remove from skillet and set aside.
- In the same skillet, add the minced garlic, stirring until fragrant, about 1 minute. Add the fresh spinach and cook until wilted.
- Pour in the heavy cream, gently stirring to combine with the spinach. Bring to a simmer, then add the Parmesan cheese and Italian seasoning, stirring until the sauce thickens slightly.
- Return the chicken to the skillet, folding it into the sauce, ensuring each piece is coated in creamy goodness.
- Meanwhile, cook the fettuccine according to package instructions until al dente. Drain and add to the skillet, tossing everything together.
- Transfer the mixture to a baking dish. In a small bowl, mix the breadcrumbs and melted butter, then sprinkle over the top of the pasta.
- Bake in the preheated oven for 15-20 minutes, until the top is golden and crispy.
- Let it cool slightly before serving, allowing the flavors to meld together perfectly.
As my abuela always said, “Cooking is a dance of flavors and patience.” Let the oven do its magic while you set the table.
