Total Time:45 minutes
Yield:4 servings
Ingredients
4 boneless, skinless chicken breasts
1 cup all-purpose flour
2 large eggs, beaten
1 cup breadcrumbs (preferably homemade or panko for extra crunch)
1 cup grated Parmesan cheese, divided
2 cups marinara sauce
1 cup shredded mozzarella cheese
1 teaspoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Fresh basil leaves for garnish (optional)
Olive oil spray
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
Prepare the chicken by pounding each breast to an even thickness. This ensures they cook evenly.
Set up your dredging station: Place the flour in one shallow dish, the beaten eggs in another, and a mixture of breadcrumbs, half the Parmesan cheese, oregano, garlic powder, salt, and pepper in a third.
Dredge each chicken breast in flour, shaking off the excess, then dip into the egg, and finally coat with the breadcrumb mixture. Press gently to ensure the breadcrumbs adhere well.
Arrange the coated chicken breasts on the prepared baking sheet. Lightly spray the tops with olive oil to promote browning.
Bake in the preheated oven for 20 minutes, then remove from the oven and spoon marinara sauce over each piece. Sprinkle with mozzarella and the remaining Parmesan cheese.
Return to the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden and the chicken reaches an internal temperature of 165°F (74°C).
Garnish with fresh basil leaves before serving for a burst of color and flavor.
