Learn how to make delicious Baked Feta Chickpeas with Roasted Cherry Tomatoes. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 block of feta cheese (about 7 ounces)
  • 2 cups cherry tomatoes
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for a little heat)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C). This temperature is perfect for roasting the cherry tomatoes until they burst and the feta becomes irresistibly creamy.
  2. In a baking dish, place the block of feta cheese right in the center. Scatter the cherry tomatoes and chickpeas around the feta.
  3. Drizzle the olive oil over the feta, tomatoes, and chickpeas. Sprinkle the minced garlic, dried oregano, red pepper flakes, salt, and pepper evenly over the dish.
  4. Gently toss the cherry tomatoes and chickpeas with the olive oil and spices using your hands or a spatula, ensuring they’re well-coated.
  5. Bake in the preheated oven for about 25-30 minutes, or until the cherry tomatoes have burst, and the feta is golden and soft.
  6. Remove from the oven and let it sit for a few minutes. The aromas will transport you to a sunlit Mediterranean terrace, a place I’ve always dreamed of visiting.
  7. Before serving, give everything a gentle stir, allowing the creamy feta to coat the chickpeas and tomatoes.
  8. Garnish with fresh basil leaves and serve with lemon wedges on the side to add a zesty touch.
