- 2 flatbreads (store-bought or homemade)
- 1 cup cooked chicken breast, shredded
- 1/2 cup BBQ sauce (your favorite brand)
- 1 cup mozzarella cheese, shredded
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Feel free to substitute the mozzarella with cheddar or a blend of cheeses for a different flavor profile. If cilantro isn’t your thing, consider using fresh basil or parsley instead.
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
- In a small bowl, mix the olive oil with garlic powder, salt, and pepper. Brush this mixture evenly over the flatbreads to add a flavorful base.
- Spread the BBQ sauce evenly over each flatbread, leaving a small border around the edges to create a crust.
- Evenly distribute the shredded chicken over the BBQ sauce. This is a great way to use leftover chicken from a previous meal!
- Sprinkle the shredded mozzarella cheese over the chicken, followed by the sliced red onions.
- Place the flatbreads on the prepared baking sheet and bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
- Remove from the oven and let the flatbreads cool for a minute or two. Sprinkle with fresh cilantro before slicing and serving.
