Ingredients
Let’s gather everything you need to create this mouthwatering dish. I always believe in using fresh, quality ingredients to make every bite count.
- 1 pound lobster meat, cooked and chopped
- 1 package (16 ounces) potato gnocchi
- 2 flatbreads
- 1 cup barbecue sauce
- 1 cup mozzarella cheese, shredded
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
- Olive oil, for drizzling
- Salt and pepper, to taste
- Lemon wedges, for serving
Feel free to get creative with substitutions. If you’re not a fan of lobster, shrimp or even chicken can be delightful alternatives. And for a spicier kick, try adding jalapeños!
Instructions
Now, let’s get cooking! Follow these simple steps to bring everything together.
- Preheat your oven to 425°F (220°C). Place your flatbreads on a baking sheet lined with parchment paper.
- In a large pot, bring salted water to a boil. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes until they float. Drain and set aside.
- In a medium bowl, combine the cooked lobster, barbecue sauce, and cooked gnocchi. Stir until everything is well coated.
- Spread the lobster and gnocchi mixture evenly over each flatbread. Top with shredded mozzarella cheese and red onion slices.
- Drizzle a little olive oil over the top and season with salt and pepper to taste.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the flatbread edges are golden brown.
- Remove from the oven and sprinkle with fresh cilantro. Serve immediately with lemon wedges on the side.
