Learn how to make delicious BBQ Lobster & Potato Gnocchi Flatbread Bakes. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Let’s gather everything you need to create this mouthwatering dish. I always believe in using fresh, quality ingredients to make every bite count.

  • 1 pound lobster meat, cooked and chopped
  • 1 package (16 ounces) potato gnocchi
  • 2 flatbreads
  • 1 cup barbecue sauce
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • Olive oil, for drizzling
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Feel free to get creative with substitutions. If you’re not a fan of lobster, shrimp or even chicken can be delightful alternatives. And for a spicier kick, try adding jalapeños!

Instructions

Now, let’s get cooking! Follow these simple steps to bring everything together.

  1. Preheat your oven to 425°F (220°C). Place your flatbreads on a baking sheet lined with parchment paper.
  2. In a large pot, bring salted water to a boil. Add the gnocchi and cook according to package instructions, usually about 2-3 minutes until they float. Drain and set aside.
  3. In a medium bowl, combine the cooked lobster, barbecue sauce, and cooked gnocchi. Stir until everything is well coated.
  4. Spread the lobster and gnocchi mixture evenly over each flatbread. Top with shredded mozzarella cheese and red onion slices.
  5. Drizzle a little olive oil over the top and season with salt and pepper to taste.
  6. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the flatbread edges are golden brown.
  7. Remove from the oven and sprinkle with fresh cilantro. Serve immediately with lemon wedges on the side.

As you prepare this dish, remember what my abuela taught me: trust your senses. Adjust the flavors to your liking and make it your own!
