Ingredients
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
2 teaspoons smoked paprika
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
Salt and pepper to taste
1 cup stone-ground grits
3 cups water
1 cup sharp cheddar cheese, shredded
1/4 cup heavy cream
1/4 cup BBQ sauce
8 small flour tortillas
1/2 cup Monterey Jack cheese, shredded
1 jalapeño, sliced (optional)
Fresh cilantro, chopped (for garnish)
Instructions
Start by preparing the grits. Bring 3 cups of water to a boil in a medium saucepan. Stir in the grits, reduce the heat to low, and cover. Cook for about 20 minutes, stirring occasionally, until thick and creamy.
Once the grits are done, stir in the sharp cheddar cheese and heavy cream. Season with salt and pepper to taste. Set aside and keep warm.
In a large skillet, heat the olive oil over medium-high heat. Toss the shrimp with smoked paprika, garlic powder, cayenne pepper, salt, and pepper.
Add the shrimp to the skillet and cook for 2-3 minutes on each side until they turn pink and are cooked through. Remove from heat and toss with BBQ sauce.
Assemble the sliders by placing a small amount of the cheesy grits on one half of a tortilla. Top with BBQ shrimp, a sprinkle of Monterey Jack cheese, and a few slices of jalapeño if using.
Fold the tortilla over to create a half-moon shape. Repeat with the remaining ingredients.
Heat a clean skillet over medium heat. Cook the quesadilla sliders for about 2-3 minutes on each side, until the tortillas are golden and the cheese is melted inside.
