Ingredients

  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) enchilada sauce
  • 1 can (10 ounces) diced tomatoes with green chilies
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 corn tortillas
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. In a large skillet, cook the ground beef over medium heat until browned, about 5-7 minutes. Drain excess fat.
  3. Add the chopped onion and minced garlic to the skillet. Sauté until the onion is translucent, about 3 minutes.
  4. Stir in the enchilada sauce, diced tomatoes with green chilies, ground cumin, chili powder, salt, and black pepper. Let the mixture simmer for 5 minutes to allow the flavors to meld.
  5. Place a layer of four corn tortillas at the bottom of the prepared baking dish. Top with half of the beef mixture, followed by one cup of shredded cheddar cheese.
  6. Repeat the layering with the remaining tortillas, beef mixture, and another cup of shredded cheddar cheese.
  7. Sprinkle the top with Monterey Jack cheese. Cover the dish with aluminum foil and bake for 20 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown.
  9. Let it cool for a few minutes, garnish with chopped cilantro, and serve warm.
