  • 1 pound beef tenderloin, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 8 ounces cremini mushrooms, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons pâté or liverwurst
  • 1 package puff pastry sheets, thawed
  • 1 egg, beaten
  • 1 tablespoon Dijon mustard

Instructions

Let’s get cooking! Follow these steps to create a dish that will become a staple at your gatherings. Remember, cooking is as much about the journey as the destination, so enjoy each step!

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Season the beef tenderloin cubes with salt and pepper. In a skillet over medium-high heat, heat the olive oil. Sear the beef cubes on all sides until browned, about 2 minutes per side. Remove from skillet and set aside to cool.
  3. In the same skillet, add the butter. Once melted, add the chopped mushrooms, garlic, and thyme. Sauté until the mushrooms are soft and any liquid has evaporated, about 5 minutes. Let the mushroom mixture cool.
  4. Roll out the puff pastry on a lightly floured surface and cut into 3-inch squares.
  5. Spread a thin layer of Dijon mustard over each pastry square. Add a small amount of pâté followed by a spoonful of the mushroom mixture in the center of each square.
  6. Place a cube of beef on top of the mushroom mixture. Fold the corners of the pastry over the beef, sealing the edges to form a neat package.
  7. Brush the tops of the pastry with the beaten egg for a golden finish.
  8. Place the bites on the prepared baking sheet and bake for 15-18 minutes, or until the pastry is golden brown.
