- 1 pound ground beef
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup cooked rice
- 1 cup canned black beans, drained and rinsed
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/2 cup salsa
- 1/4 cup sour cream
- 1/4 cup chopped fresh cilantro

Instructions
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 3 minutes. This aroma always brings me back to my childhood kitchen.
- Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Drain any excess fat.
- Stir in the cumin, chili powder, paprika, salt, and pepper. These spices are the heart of the dish, providing warmth and depth.
- Add the cooked rice and black beans to the skillet, mixing well to combine. Allow to heat through for an additional 2-3 minutes.
- Warm the tortillas in a dry skillet or microwave until pliable.
- Place a tortilla on a flat surface. Spread a generous spoonful of the beef mixture along the center, then top with shredded cheese and a dollop of salsa.
- Fold in the sides of the tortilla and roll it up tightly. Repeat with the remaining tortillas and filling.
- To serve, cut each burrito in half and garnish with sour cream and fresh cilantro. This step is a nod to the love and care my family always put into every dish.
