2 pounds of lamb shoulder, cut into chunks (substitute with beef if preferred)
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon dried oregano
Salt and pepper to taste
2 cups chicken or beef broth
1 can (14 ounces) diced tomatoes
2 cups cubed potatoes
1 cup sliced carrots
Fresh cilantro for garnish
Instructions
Begin by heating the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
Add the minced garlic, cumin, smoked paprika, oregano, salt, and pepper. Stir for about 1 minute until fragrant.
Add the lamb chunks to the pot, searing them until they are browned on all sides. This should take approximately 6-8 minutes.
Pour in the broth and diced tomatoes, scraping the bottom of the pot to release any browned bits. Bring the mixture to a gentle boil.
Add the cubed potatoes and sliced carrots. Lower the heat, cover, and let it simmer for about 45 minutes to 1 hour, or until the meat is tender and the vegetables are cooked through.
Adjust seasoning with more salt and pepper if needed. Stir in fresh cilantro just before serving for a burst of freshness.
