  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups chicken or beef broth
  • 1 can (14 ounces) diced tomatoes
  • 2 cups cubed potatoes
  • 1 cup sliced carrots
  • Fresh cilantro for garnish

Instructions

  1. Begin by heating the olive oil in a large pot over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic, cumin, smoked paprika, oregano, salt, and pepper. Stir for about 1 minute until fragrant.
  3. Add the lamb chunks to the pot, searing them until they are browned on all sides. This should take approximately 6-8 minutes.
  4. Pour in the broth and diced tomatoes, scraping the bottom of the pot to release any browned bits. Bring the mixture to a gentle boil.
  5. Add the cubed potatoes and sliced carrots. Lower the heat, cover, and let it simmer for about 45 minutes to 1 hour, or until the meat is tender and the vegetables are cooked through.
  6. Adjust seasoning with more salt and pepper if needed. Stir in fresh cilantro just before serving for a burst of freshness.
