Instructions
Follow these steps to bring these delightful bars to life. Remember, cooking is about joy, so enjoy every moment of the process!
- Preheat your oven to 325°F (163°C) and line an 8×8-inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a bowl, combine the graham cracker crumbs, 1/4 cup of sugar, and melted butter. Stir until well combined, then press the mixture firmly into the bottom of the prepared pan to form the crust.
- Bake the crust for 10 minutes, then set aside to cool while preparing the filling.
- In a large mixing bowl, beat the cream cheese and 1/2 cup of sugar together until smooth and creamy, about 2-3 minutes.
- Add the eggs, one at a time, beating well after each addition. Mix in the lemon zest, lemon juice, and vanilla extract until fully combined.
- Pour the cheesecake mixture over the cooled crust, spreading it evenly with a spatula.
- Scatter the blueberries evenly over the top of the cheesecake layer. Gently press them down with the back of a spoon.
- Bake for 35-40 minutes, or until the edges are set but the center still has a slight wobble. Allow the bars to cool in the pan at room temperature, then refrigerate for at least 2 hours before slicing.
