Ingredients

  • 12 ounces of pasta (penne or fettuccine work well)
  • 2 tablespoons olive oil
  • 1 pound chicken breast, cut into bite-sized pieces
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 5 ounces Boursin cheese (Garlic & Fine Herbs)
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tablespoon fresh parsley, chopped
  • Optional: red pepper flakes for a bit of heat

Instructions

  1. Begin by cooking your pasta according to the package instructions. Aim for al dente, as it will continue to cook slightly when combined with the sauce. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chicken pieces, seasoned with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. This step always takes me back to my childhood, helping my abuela with her aromatic dishes.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet — these add incredible flavor!
  5. Reduce the heat to low and stir in the Boursin cheese and heavy cream. Mix until the cheese is fully melted and the sauce is smooth and creamy.
  6. Return the cooked chicken to the skillet, along with the spinach and Parmesan cheese. Stir until the spinach is wilted and everything is well combined.
  7. Add the cooked pasta to the skillet, tossing everything together until the pasta is well coated with the creamy sauce. Feel free to add a pinch of red pepper flakes for a little kick, much like Marco prefers.
  8. Garnish with fresh parsley before serving. This final touch not only adds a pop of color but also a fresh note that brings the dish together beautifully.
