2 racks of pork baby back ribs
1 cup packed brown sugar
1 tablespoon smoked paprika
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon cayenne pepper (optional for added heat)
1 cup BBQ sauce (your favorite brand)
2 cups yellow cornmeal
1 cup all-purpose flour
1/2 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 1/4 cups milk
1/4 cup melted butter
2 large eggs
Instructions
Preheat your oven to 300°F. Line a baking sheet with aluminum foil for easy cleanup.
In a small bowl, combine the brown sugar, smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper (if using).
Remove the membrane from the back of the ribs for tenderness. Pat the ribs dry with paper towels, then generously rub the spice mixture over both sides.
Place the ribs on the prepared baking sheet, cover them with foil, and bake for 2.5 hours or until tender.
Meanwhile, preheat your grill to medium-high heat. If you don’t have a grill, you can broil the ribs in the oven as an alternative.
Once the ribs are tender, remove them from the oven and brush with BBQ sauce. Grill for 5-10 minutes per side, allowing the sauce to caramelize.
For the cornbread, increase the oven temperature to 400°F. Grease a 9×9-inch baking dish.
In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt. In another bowl, mix milk, melted butter, and eggs until well combined.
Pour the wet ingredients into the dry ingredients, stirring just until combined. Be careful not to overmix.
Pour the batter into the prepared baking dish and bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
Let the cornbread cool slightly before slicing and serving alongside the ribs.
