Ingredients
- 4 large ripe tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2 cloves garlic, minced
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup grated Parmesan cheese (optional)
- 1 baguette, sliced
- 1 tablespoon butter (for toasting the baguette)
If you want to add some extra zing, consider substituting the balsamic vinegar with a splash of lemon juice. And for a bit of heat, a pinch of red pepper flakes works wonders!
Instructions
- Start by preparing your baguette. Preheat your oven to 400°F. Slice the baguette into 1/2-inch slices and brush each side lightly with butter.
- Place the slices on a baking sheet and toast in the oven for about 5 minutes, or until golden brown. Set aside to cool.
- While the bread is toasting, dice the tomatoes and place them in a medium-sized bowl. Add the chopped basil, minced garlic, olive oil, balsamic vinegar, salt, and pepper.
- Stir everything together gently until well combined. If you’re opting for Parmesan cheese, now is the time to mix it in.
- Let the mixture sit for at least 10 minutes to allow the flavors to meld together. This is a trick I learned from my abuela, who always insisted on letting ingredients “get to know each other” before serving.
- Serve the tomato mixture alongside the toasted baguette slices, and enjoy every flavorful bite!
