Ingredients
- 1 tablespoon olive oil
- 1 pound ground chicken
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 can (15 ounces) white beans, drained and rinsed
- 1 can (15 ounces) diced tomatoes
- 1/2 cup buffalo sauce
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper, to taste
- Optional toppings: sliced green onions, shredded cheese, sour cream, or tortilla chips
If you don’t have ground chicken, ground turkey works well as a substitute. For those who prefer a milder heat, adjust the buffalo sauce to your taste. It’s all about making the recipe your own!
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until it’s translucent, about 5 minutes.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Add the ground chicken, breaking it up with a spoon, and cook until browned, about 6-7 minutes.
- Stir in the chicken broth, white beans, diced tomatoes, buffalo sauce, cumin, and smoked paprika. Bring the mixture to a simmer.
- Reduce the heat to low and let the chili cook for about 20 minutes, stirring occasionally. This allows the flavors to meld beautifully together.
- Season with salt and pepper to taste. Adjust the buffalo sauce if you prefer more heat.
- Serve hot, garnished with your choice of toppings such as green onions, cheese, sour cream, or tortilla chips.
