Ingredients

  • 1 pound ground chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (15 ounces) white beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1/2 cup buffalo sauce
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Optional toppings: sliced green onions, shredded cheese, sour cream, or tortilla chips

If you don’t have ground chicken, ground turkey works well as a substitute. For those who prefer a milder heat, adjust the buffalo sauce to your taste. It’s all about making the recipe your own!

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook until it’s translucent, about 5 minutes.
  2. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Add the ground chicken, breaking it up with a spoon, and cook until browned, about 6-7 minutes.
  4. Stir in the chicken broth, white beans, diced tomatoes, buffalo sauce, cumin, and smoked paprika. Bring the mixture to a simmer.
  5. Reduce the heat to low and let the chili cook for about 20 minutes, stirring occasionally. This allows the flavors to meld beautifully together.
  6. Season with salt and pepper to taste. Adjust the buffalo sauce if you prefer more heat.
  7. Serve hot, garnished with your choice of toppings such as green onions, cheese, sour cream, or tortilla chips.
