Ingredients
4 large croissants, halved
1 pound large shrimp, peeled and deveined
1/2 cup buffalo sauce
1 tablespoon olive oil
1 cup shredded cheddar cheese
1/4 cup blue cheese crumbles
1/4 cup ranch dressing
1 tablespoon unsalted butter
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Optional: 1/4 cup sliced green onions
Instructions
Preheat your oven to 375°F. Line a baking sheet with parchment paper.
In a medium bowl, toss the shrimp with buffalo sauce until well coated. Set aside to marinate for about 10 minutes.
Heat olive oil in a skillet over medium-high heat. Add the marinated shrimp and cook until pink and opaque, about 3-4 minutes per side. Remove from heat.
While shrimp is cooking, place the croissant halves on the prepared baking sheet. Spread a thin layer of ranch dressing on each half.
Distribute the cooked shrimp evenly across the bottom halves of the croissants. Sprinkle cheddar cheese on top of the shrimp.
Place the top halves of the croissants over the cheese and shrimp. Brush the tops with melted butter for extra richness.
Bake in the preheated oven until the croissants are golden and the cheese is bubbly, about 10 minutes.
Remove from oven, and let cool slightly before serving. Garnish with blue cheese crumbles, parsley, and optional green onions.
