Instructions
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. This creates a dry mix that forms the base of our beignets.
- In another bowl, beat the buttermilk, egg, and vanilla extract until smooth. I love the aroma of vanilla as it reminds me of baking days with my siblings.
- Gently pour the wet ingredients into the dry ingredients, stirring until just combined. The batter should be thick yet pourable.
- Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Carefully drop spoonfuls of batter into the hot oil, cooking in batches to avoid overcrowding.
- Fry each beignet for about 2-3 minutes on each side or until golden brown and puffed.
- Using a slotted spoon, remove the beignets and drain them on paper towels to absorb excess oil.
