4 boneless, skinless chicken breasts
1 cup buttermilk

1/2 cup unsalted butter, cold and cubed
1 cup shredded sharp cheddar cheese
1-2 jalapeños, seeded and finely chopped
3/4 cup buttermilk (for biscuits)
Instructions
Start by marinating the chicken. In a bowl, combine the chicken breasts, 1 cup of buttermilk, and hot sauce. Cover and refrigerate for at least 1 hour or overnight for best results.
Preheat your oven to 450°F. Begin preparing the biscuits by whisking together 2 cups of flour, baking powder, baking soda, and salt in a large bowl.
Cut the cold butter into the flour mixture using a pastry cutter or your fingers until it resembles coarse crumbs. Stir in the cheddar cheese and chopped jalapeños.
Add the buttermilk to the biscuit mixture and stir until just combined. Turn the dough out onto a floured surface and gently knead a few times. Roll out to about 1/2-inch thickness and cut into rounds using a biscuit cutter.
Place biscuits on a baking sheet and bake for 12-15 minutes until golden brown. Set aside to cool.
While the biscuits bake, prepare the flour coating for the chicken. In a shallow dish, mix 2 cups of flour with paprika, garlic powder, onion powder, salt, and pepper.
Heat vegetable oil in a large skillet over medium-high heat. Dredge the marinated chicken in the seasoned flour, shaking off excess.
Fry the chicken in the hot oil until golden brown and cooked through, about 6-8 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
