Ingredients
- 2 cups cooked and mashed potatoes
- 1 cup fresh crab meat, picked over for shells
- 1 cup shredded cheddar cheese
- 1/4 cup chopped scallions
- 1 tablespoon Cajun seasoning
- 1/2 cup sour cream
- 1 tablespoon lemon juice
- 1 can refrigerated biscuit dough (8 biscuits)
- 2 tablespoons melted butter
- Salt and pepper to taste
If you’re in the mood for a twist, you can substitute the crab with shrimp or even a mix of seafood. For a bit of extra heat, add a dash of hot sauce or some chopped jalapeños, just like how my family would sprinkle a little extra spice into our meals.
Instructions
- Preheat your oven to 375°F. Prepare a large, oven-safe skillet by brushing it with some melted butter.
- In a large mixing bowl, combine mashed potatoes, crab meat, cheddar cheese, scallions, Cajun seasoning, sour cream, and lemon juice. Stir until well combined. Add salt and pepper to taste.
- Separate the biscuit dough and flatten each biscuit into a 4-inch circle. Press each circle gently into the skillet, forming little cups.
- Spoon the crab and potato mixture into each biscuit cup, filling them generously.
- Brush the tops of the biscuit cups with the remaining melted butter.
- Bake in the preheated oven for 20-25 minutes, or until the biscuit tops are golden brown and the filling is bubbly.
- Remove from the oven and let cool for a few minutes before serving.
From my experience, keeping a watchful eye during the last few minutes of baking is key. These savory cups have a way of disappearing quickly, so you’ll want to make sure they’re cooked to perfection!
