Ingredients

  • 1 pound of Cajun sausage, sliced
  • 1 pound of large shrimp, peeled and deveined
  • 4 cups of frozen tater tots
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a large baking dish with a bit of olive oil.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced Cajun sausage and cook until browned, about 5 minutes.
  3. Add the chopped onion, red bell pepper, and green bell pepper to the skillet. Sauté until the vegetables are softened, about 4-5 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the peeled and deveined shrimp to the skillet. Sprinkle with Cajun seasoning, salt, and pepper. Cook until the shrimp turn pink and opaque, about 3-4 minutes.
  6. In the prepared baking dish, layer the frozen tater tots evenly across the bottom.
  7. Pour the sausage, shrimp, and vegetable mixture over the tater tots, spreading it out evenly.
  8. Drizzle the heavy cream over the top, then sprinkle with shredded cheddar cheese.
  9. Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly and the tater tots are crispy.
  10. Remove from the oven and let it cool slightly before serving. Garnish with chopped parsley if desired.
