Ingredients
- 4 salmon fillets, skinless
- 12 large shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 tablespoon lemon juice
- Chopped parsley for garnish
Feel free to substitute the salmon with another firm fish like cod, and adjust the level of Cajun seasoning to suit your spice preference.
Instructions
- Start by seasoning the salmon fillets and shrimp with Cajun seasoning. Make sure each piece is well coated to ensure that spicy kick.
- Heat the olive oil in a large skillet over medium-high heat. Add the salmon fillets and cook for about 4 minutes on each side, until they’re golden brown and cooked through. Remove from the skillet and set aside.
- In the same skillet, add the shrimp and cook for 2-3 minutes on each side until they turn pink and opaque. Remove and set aside with the salmon.
- Lower the heat to medium and melt the butter in the skillet. Add the minced garlic and sauté for about 1 minute, until fragrant.
- Pour in the heavy cream and chicken broth, stirring to combine. Let the mixture simmer gently for about 5 minutes until it thickens slightly.
- Add the Parmesan cheese, stirring until the cheese melts into the sauce. Season with salt, pepper, and lemon juice to taste.
- Return the salmon and shrimp to the skillet, spooning the sauce over the top. Allow them to heat through for a minute or two.
- Garnish with chopped parsley and serve immediately for a meal that’s sure to impress.
