Ingredients

  • 6 cups Rice Krispies cereal
  • 1 package (10 oz) of mini marshmallows
  • 1/4 cup unsalted butter
  • 1 cup caramel bits
  • 1/4 cup heavy cream
  • 1 cup semisweet chocolate chips
  • 1/2 cup chopped pecans
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line a 9×13-inch baking dish with parchment paper, letting the edges hang over the sides for easy removal.
  2. In a large saucepan over low heat, melt the butter. Add the mini marshmallows and stir until they are completely melted and the mixture is smooth. Remove from heat and stir in the vanilla extract.
  3. Pour the Rice Krispies cereal into the melted marshmallow mixture and gently fold until all the cereal is evenly coated.
  4. Press the mixture evenly into the prepared baking dish. A tip from my kitchen: use a buttered spatula or wax paper to prevent sticking.
  5. In a small saucepan, combine the caramel bits and heavy cream. Stir over low heat until the caramel is smooth and melted. Pour the caramel over the Rice Krispies layer, spreading it evenly.
  6. Melt the chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the caramel layer.
  7. Sprinkle the chopped pecans over the chocolate layer, gently pressing them in to adhere.
  8. Let the treats cool at room temperature until set, then lift them out using the parchment paper edges and cut into squares.
