Ingredients

To create this flavorful dish, gather the following ingredients:

  • 12 oz spaghetti or your favorite pasta
  • 3 large yellow onions, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons chilli oil (adjust to taste)
  • 3 cloves garlic, minced
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish

If you don’t have chilli oil, you can substitute with a mix of olive oil and red pepper flakes. For a vegan version, simply omit the Parmesan or use a plant-based alternative.

Instructions

  1. Start by cooking your pasta according to the package instructions. Once cooked, drain and set aside, reserving a cup of the pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onions and sprinkle with sugar. Cook slowly, stirring occasionally, for about 25 to 30 minutes until the onions are deeply golden and caramelized.
  3. Once the onions are caramelized, add the minced garlic, salt, and pepper. Stir for another 2 minutes until the garlic is fragrant.
  4. Stir in the chilli oil, allowing it to blend with the onions and garlic. Be cautious with the amount if you’re sensitive to heat.
  5. Add the cooked pasta to the skillet, tossing it with the onion mixture. If needed, add some of the reserved pasta water to help the sauce coat the pasta evenly.
  6. Remove from heat and stir in the Parmesan cheese if using. Adjust the seasoning if necessary.
  7. Serve immediately, garnished with fresh parsley.
