1 pound fresh shrimp, peeled and deveined
1 pound sea scallops
2 tablespoons unsalted butter
1 cup chopped onion
1 cup chopped celery
1 cup chopped carrots
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups seafood stock
1 cup heavy cream
1 teaspoon Old Bay seasoning
Salt and pepper to taste
1 cup shredded sharp cheddar cheese
2 cups biscuit baking mix
2/3 cup milk
1/4 cup melted butter
1 tablespoon chopped fresh parsley
Instructions
Preheat your oven to 400°F. Grease a large baking dish and set it aside.
In a large skillet, melt the butter over medium heat. Add the onion, celery, and carrots, sautéing until they are tender, about 5-7 minutes.
Add the garlic and cook for another minute until fragrant. Stir in the flour and cook for 2 minutes, stirring constantly.
Gradually whisk in the seafood stock and heavy cream, ensuring there are no lumps. Bring the mixture to a simmer and let it thicken, about 5 minutes.
Add the shrimp, scallops, Old Bay seasoning, salt, and pepper. Cook until the seafood is just opaque, about 5 minutes.
Pour the seafood mixture into the prepared baking dish.
In a medium bowl, combine the biscuit baking mix, milk, cheddar cheese, and parsley to form a dough. Drop spoonfuls of the dough over the seafood mixture.
Bake in the preheated oven for 25-30 minutes, until the biscuits are golden brown and cooked through.
