Ingredients

  • 1 pound fresh shrimp, peeled and deveined
  • 1 pound sea scallops
  • 2 tablespoons unsalted butter
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup chopped carrots
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups seafood stock
  • 1 cup heavy cream
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 2 cups biscuit baking mix
  • 2/3 cup milk
  • 1/4 cup melted butter
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F. Grease a large baking dish and set it aside.
  2. In a large skillet, melt the butter over medium heat. Add the onion, celery, and carrots, sautéing until they are tender, about 5-7 minutes.
  3. Add the garlic and cook for another minute until fragrant. Stir in the flour and cook for 2 minutes, stirring constantly.
  4. Gradually whisk in the seafood stock and heavy cream, ensuring there are no lumps. Bring the mixture to a simmer and let it thicken, about 5 minutes.
  5. Add the shrimp, scallops, Old Bay seasoning, salt, and pepper. Cook until the seafood is just opaque, about 5 minutes.
  6. Pour the seafood mixture into the prepared baking dish.
  7. In a medium bowl, combine the biscuit baking mix, milk, cheddar cheese, and parsley to form a dough. Drop spoonfuls of the dough over the seafood mixture.
  8. Bake in the preheated oven for 25-30 minutes, until the biscuits are golden brown and cooked through.
  9. Brush the tops of the biscuits with melted butter as soon as they come out of the oven for an extra buttery finish.
