- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup cold butter, cubed
- 1 cup sharp cheddar cheese, shredded

- 1 pound large shrimp, peeled and deveined
- 8 ounces andouille sausage, sliced
- 2 tablespoons olive oil

Instructions
- Preheat your oven to 425°F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the cold butter to the flour mixture and cut it in with a pastry cutter or fork until it resembles coarse crumbs.
- Stir in the shredded cheddar cheese.
- Pour in the buttermilk and mix until just combined. Be careful not to overwork the dough.
- Drop spoonfuls of the dough onto the prepared baking sheet. Bake for 12-15 minutes or until golden brown.
- While the biscuits bake, heat the olive oil in a large skillet over medium-high heat.
- Add the andouille sausage slices and cook until browned, about 3-4 minutes.
- Add the onion and garlic to the skillet and sauté until the onion is translucent.
- Sprinkle the flour over the sausage mixture and stir to coat.
- Slowly pour in the chicken broth and heavy cream, stirring constantly until the gravy thickens, about 5 minutes.
- Add the shrimp and Cajun seasoning, cooking until the shrimp are pink and cooked through.
- Season with salt and pepper to taste. Serve the gravy over warm cheddar biscuits.
