1 large onion, diced

3 cups russet potatoes, peeled and diced
4 cups beef broth
1 cup whole milk
2 cups shredded sharp cheddar cheese
1 teaspoon smoked paprika

2 tablespoons fresh parsley, chopped (optional)
Instructions
Heat the olive oil in a large pot over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.
