Ingredients
Here’s everything you’ll need to bring this comforting dish to life. If you don’t have something on hand, I’ve included some substitution suggestions that will work beautifully.
- 3 cups cooked and shredded chicken (rotisserie chicken works great)
- 4 cups diced potatoes (Yukon Gold or Russet)
- 1 cup buffalo sauce (adjust to taste)
- 2 cups shredded cheddar cheese
- 1 cup sour cream (or Greek yogurt for a lighter option)
- 1/2 cup cream cheese, softened
- 1/4 cup chopped green onions
- 1/4 cup crumbled blue cheese (optional)
- 2 tablespoons unsalted butter, melted
- Salt and pepper to taste
Instructions
Follow these simple steps to create a dish that feels like a warm hug with a spicy surprise.
- Preheat your oven to 375°F (190°C).
- In a large pot, boil the diced potatoes until they are fork-tender, about 10-12 minutes. Drain and set aside.
- In a large bowl, combine the buffalo sauce, sour cream, cream cheese, and melted butter. Stir until smooth.
- Add the shredded chicken, cooked potatoes, and half of the shredded cheddar cheese to the bowl. Mix until everything is well coated.
- Transfer the mixture to a greased 9×13 inch baking dish. Top with the remaining cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and let it cool for a few minutes. Sprinkle with chopped green onions and crumbled blue cheese, if using, before serving.
