Here’s what you’ll need to bring this delicious dish to life:
- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- 2 teaspoons Cajun seasoning (store-bought or homemade)
- 3 cloves garlic, minced
- 8 ounces rotini pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped parsley for garnish (optional)
- Salt and pepper to taste
If you’re out of rotini, feel free to substitute with penne or fusilli. For a lighter version, you can swap the heavy cream with half-and-half.
Instructions
Follow these steps for a delightful meal that’s ready in no time:
- Heat olive oil in a large skillet over medium heat. Add the diced chicken and season with Cajun seasoning. Cook for 5-7 minutes until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Add the rotini pasta, chicken broth, and heavy cream to the skillet. Stir well to combine, bringing the mixture to a gentle simmer.
- Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is al dente and has absorbed most of the liquid.
- Reduce the heat to low, return the cooked chicken to the skillet, and stir in the shredded cheddar and Parmesan cheese. Stir until the cheese is melted and the sauce is creamy.
