Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheddar cheese
  • 1 cup salsa
  • 6-8 corn tortillas, cut into strips
  • 1 tablespoon olive oil
  • Salt and pepper to taste

You can substitute the ground beef with ground turkey or chicken for a lighter version. Feel free to add your favorite toppings like sour cream, avocado, or jalapeños to customize this dish to your liking.

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, add the olive oil and sauté the diced onion and garlic until fragrant, about 2 minutes.
  3. Add the ground beef to the skillet, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes.
  4. Stir in the taco seasoning, black beans, corn, and diced tomatoes with green chilies. Let everything simmer for about 5 minutes to meld the flavors.
  5. In a greased 9×13 inch baking dish, layer half of the tortilla strips on the bottom.
  6. Spoon the beef mixture over the tortillas, spreading it evenly.
  7. Sprinkle 1 cup of shredded cheese over the beef layer.
  8. Layer the remaining tortilla strips on top, followed by the salsa and the rest of the cheese.
  9. Bake for 20-25 minutes, or until the cheese is bubbly and golden brown.
  10. Let it cool for a few minutes before serving, allowing the layers to set.
