Instructions
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with a little olive oil.
In a large skillet, heat a tablespoon of olive oil over medium heat. Add the cubed chicken, garlic powder, onion powder, smoked paprika, salt, and pepper. Cook until the chicken is no longer pink, about 6-8 minutes.
Transfer the cooked chicken to the prepared baking dish. Sprinkle the crumbled bacon and diced jalapeños evenly over the chicken.
In a medium bowl, mix together the cream cheese and sour cream until smooth. Stir in half of the cheddar and mozzarella cheeses.
Spread the cream cheese mixture over the chicken and jalapeños in the baking dish. Top with the remaining cheddar and mozzarella cheeses.
If using, sprinkle the crushed tortilla chips over the top for an added crunch.
Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown. Let it cool for a few minutes before serving.
