Learn how to make delicious Cheesy Loaded Meatloaf Casserole. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 1/2 pounds ground beef
  • 1 cup breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheddar cheese, plus more for topping
  • 1/2 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 2 cups mashed potatoes
  • 2 tablespoons chopped chives

Substitution tip: You can swap ground beef for turkey or chicken to lighten the dish, and feel free to use Greek yogurt instead of sour cream for a tangy twist.

Instructions

  1. Preheat your oven to 375°F. Grease a 9×13-inch baking dish and set aside.
  2. In a large bowl, combine the ground beef, breadcrumbs, milk, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined, but be careful not to overmix, as this can make the meatloaf tough.
  3. Press the meat mixture into the prepared baking dish, spreading it evenly.
  4. Bake for 25 minutes. You’ll know it’s ready when the edges are browned and the center is firm to the touch.
  5. While the meatloaf is baking, mix the mashed potatoes with sour cream, half of the shredded cheddar cheese, and half of the cooked bacon.
  6. Remove the meatloaf from the oven and spread the mashed potato mixture over the top.
  7. Sprinkle the remaining cheese and bacon on top of the mashed potatoes.
  8. Return to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
  9. Garnish with chopped chives before serving.

Cooking tip: To save time, you can use leftover mashed potatoes or instant mashed potatoes in this recipe. It’s all about making this meal as easy and enjoyable as possible!
