Ingredients
- 2 cups mashed potatoes (leftover or freshly made)
- 1 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 large eggs, beaten
- 1/4 cup all-purpose flour
- 2 tablespoons chopped chives
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
- Olive oil or cooking spray for greasing
If you’re missing an ingredient or two, don’t worry! Swap out cheddar for mozzarella or even a spicy pepper jack for a kick. No chives? Fresh parsley or green onions work beautifully here too.
Instructions
- Preheat your oven to 400°F (200°C). Grease a mini muffin tin with olive oil or cooking spray.
- In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, beaten eggs, flour, chives, garlic powder, salt, and pepper. Mix until well combined.
- Using a spoon, scoop the mixture into the prepared muffin tin, filling each cup to the top. Press down slightly to ensure they’re packed and will hold their shape.
- Bake for 20-25 minutes, or until the tops are golden brown and crisp. You’ll know they’re done when a slight jiggle is gone and the aroma is too tempting to resist!
- Allow to cool for a few minutes in the tin before gently removing them. Serve warm and enjoy the cheesy goodness!
As a little tip from my kitchen to yours, try adding a pinch of smoked paprika for a smoky depth that takes these puffs to another level.
