Learn how to make delicious Cheesy Stuffed Meatloaf Bites. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 1 pound ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup chopped onion
  • 1 egg
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 ounces cheddar cheese, cut into small cubes
  • 1/4 cup ketchup
  • 1 tablespoon brown sugar
  • 1 teaspoon mustard

Feel free to substitute the cheddar with Monterey Jack or even a spicy pepper jack if you’re feeling adventurous. These small changes can bring a new twist to the flavors and make the recipe uniquely yours.

Instructions

  1. Preheat your oven to 375°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, onion, egg, Worcestershire sauce, garlic powder, salt, and pepper. Mix until well combined.
  3. Take a small amount of the meat mixture and flatten it into a disc in your hand. Place a cube of cheddar cheese in the center and fold the meat around it, forming a ball. Repeat with the remaining mixture and cheese.
  4. Arrange the meatloaf bites on the prepared baking sheet, leaving space between each bite.
  5. In a small bowl, mix together the ketchup, brown sugar, and mustard. Brush this sauce over each meatloaf bite.
  6. Bake in the preheated oven for 20-25 minutes, or until the meat is cooked through and the tops are slightly caramelized.
  7. Let them cool for a few minutes before serving, allowing the cheese to set slightly.

Remember, like my abuela always said, “Cooking is an art, not a science.” Feel free to adjust the seasoning to your preference or add herbs like parsley or thyme for an extra layer of flavor.
