Ingredients
- 1 cup strong brewed coffee, cooled
- 1/4 cup amaretto liqueur
- 24 ladyfingers
- 1 cup mascarpone cheese
- 1 cup heavy cream
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup fresh cherries, pitted and halved
- 1/4 cup cherry preserves
- Unsweetened cocoa powder, for dusting
- Dark chocolate shavings, for garnish
Feel free to substitute the fresh cherries with frozen ones if they’re out of season. And if you’re looking for a non-alcoholic version, you can replace the amaretto with almond extract. Just a splash will do to maintain that rich, nutty flavor.
Instructions
- In a shallow dish, combine the cooled coffee and amaretto liqueur.
- Dip each ladyfinger quickly into the coffee mixture and line the bottom of a 9×9-inch dish with them.
- In a large bowl, beat together the mascarpone cheese, heavy cream, sugar, and vanilla extract until soft peaks form.
- Spread half of the mascarpone mixture over the layer of ladyfingers.
- In a small saucepan over low heat, warm the cherry preserves until they become syrupy, then fold in the fresh cherries.
- Spread the cherry mixture over the mascarpone layer in the dish.
- Repeat the layers with the remaining ladyfingers dipped in coffee, followed by the rest of the mascarpone mixture.
- Dust the top with cocoa powder and garnish with dark chocolate shavings.
- Refrigerate for at least 4 hours, or overnight, to allow the flavors to meld beautifully.
