Ingredients

  • 1 and 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk (or substitute with 1/2 cup milk mixed with 1/2 tablespoon lemon juice)
  • 1 teaspoon vanilla extract
  • 1/2 cup hot water
  • 24 maraschino cherries, drained
  • 1 cup heavy cream (for frosting)
  • 2 cups powdered sugar (for frosting)
  • 1/2 cup unsalted butter, softened (for frosting)
  • 1/4 cup maraschino cherry juice (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, vegetable oil, buttermilk, and vanilla extract until well combined.
  4. Add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the hot water; the batter will be thin, but that’s okay!
  5. Fill each cupcake liner halfway with the batter. Place a maraschino cherry in the center of each cupcake, then cover with more batter until each liner is 3/4 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let them cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
  7. For the frosting, beat the softened butter until creamy. Gradually add powdered sugar, alternating with the cherry juice, until the frosting is smooth and fluffy.
  8. Once the cupcakes are completely cool, pipe or spread the frosting on top, and garnish with a cherry for that extra touch of nostalgia.
