- 2 cups cooked and shredded chicken (rotisserie chicken works great!)
- 1 ripe avocado, mashed
- 4 slices of sourdough bread
- 4 slices of cheddar cheese
- 2 tablespoons mayonnaise
- 1 tablespoon lime juice
- Salt and pepper to taste
- 2 tablespoons butter, softened
- Optional: 1/2 teaspoon chili powder for a spicy kick
Substitute suggestions: If you don’t have sourdough, any hearty bread like ciabatta or whole-grain will do. For a lighter option, swap cheddar with Swiss cheese or mozzarella. Want to mix it up? Add some sliced tomatoes or crispy bacon for extra flavor.
Instructions
- In a medium bowl, combine the shredded chicken, mashed avocado, lime juice, mayonnaise, salt, and pepper. Mix well until all ingredients are evenly incorporated. If you like a hint of spice, add the chili powder at this stage.
- Lay out the slices of sourdough bread on a clean surface. Spread butter on one side of each slice, ensuring the edges are covered for an even golden brown finish.
- On the unbuttered side of two slices, spoon the chicken and avocado mixture evenly. Top each with two slices of cheddar cheese.
- Close the sandwiches with the remaining slices of bread, buttered side facing out.
- Heat a non-stick skillet over medium heat. Place the sandwiches in the skillet, cover, and cook for about 4-5 minutes on each side, or until the bread is golden brown and the cheese has melted beautifully.
- Remove from heat, let them cool for a minute, then slice in half and serve warm. Enjoy the delicious medley of flavors!
