  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 1 tablespoon mayonnaise
  • 1 large egg
  • 4 ounces sliced ham
  • 4 ounces Swiss cheese, sliced
  • 1/4 cup chopped parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, black pepper, Dijon mustard, mayonnaise, and egg. Mix until just combined, taking care not to overwork the mixture.
  3. On a clean surface, lay out a large piece of plastic wrap. Spread the chicken mixture into a rectangle about 1/2 inch thick.
  4. Layer the ham slices evenly over the chicken mixture, followed by the Swiss cheese slices.
  5. Using the plastic wrap to help, carefully roll the mixture into a loaf, sealing the edges to encase the ham and cheese.
  6. Transfer the loaf onto the prepared baking sheet, seam side down.
  7. Bake in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the loaf is golden brown.
