Ingredients
To create this delightful dish, gather the following ingredients, which are staples in my kitchen:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/2 cup grated Parmesan cheese
- 3 cups fresh baby spinach
- 1 tablespoon lemon juice
If you’re feeling adventurous, you can substitute the heavy cream with coconut milk for a dairy-free version, or use kale in place of spinach for a different twist.
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
- Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the skillet. This step infuses the sauce with a rich, deep flavor.
- Reduce the heat to low and stir in the heavy cream and Italian seasoning. Let it simmer for about 2-3 minutes until the sauce begins to thicken.
- Stir in the Parmesan cheese until melted and smooth. This is the moment the sauce truly comes together. Add the fresh spinach and lemon juice, stirring until the spinach is wilted.
- Return the chicken breasts to the skillet, spooning the sauce over them. Allow everything to simmer together for another 2 minutes, letting the flavors meld beautifully.
- Serve the chicken with a generous amount of sauce and enjoy!
