Learn how to make delicious Chicken Francese. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1/2 cup dry white wine (or replace with additional chicken broth)
  • 1/4 cup fresh lemon juice
  • 1/4 cup unsalted butter
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley, chopped for garnish
  • Lemon slices, for garnish

Feel free to experiment with substitutions! If you’re out of Parmesan, try Pecorino Romano for a sharper flavor. And if you prefer, you can use gluten-free flour to accommodate dietary needs without sacrificing taste.

Instructions

  1. Start by pounding the chicken breasts to about 1/2 inch thickness, ensuring even cooking.
  2. In a shallow bowl, mix together the flour, salt, and pepper. In another bowl, whisk the eggs and Parmesan cheese until well combined.
  3. Heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat. Dip each chicken breast into the flour mixture, then into the egg mixture, allowing excess to drip off.
  4. Place the chicken in the skillet, cooking for about 3-4 minutes on each side until golden brown and cooked through. Transfer to a plate and keep warm.
  5. In the same skillet, add the white wine and chicken broth, scraping up any browned bits from the bottom. Bring to a simmer.
  6. Stir in the lemon juice and remaining butter, cooking until the sauce slightly thickens, about 3-4 minutes. Taste and adjust seasoning if needed.
  7. Return the chicken to the skillet, spooning the sauce over the top to coat. Cook for an additional 2 minutes to heat through.
  8. Garnish with fresh parsley and lemon slices before serving.

As my abuela always said, cooking is about engaging all your senses. Pay attention to the scent of the garlic, the sizzle of the chicken, and the vibrant color of the sauce as it comes together. These are the moments that make cooking an experience, not just a task.
