Learn how to make delicious Chicken Rollatini. Easy recipe with step-by-step instructions.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 cup marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1/4 cup fresh basil, chopped (optional)
  • 1/4 cup breadcrumbs (optional for added crunch)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with a little olive oil and set aside.
  2. Place each chicken breast between two sheets of plastic wrap and pound to about 1/4-inch thickness using a meat mallet. This step always reminds me of my abuela’s rhythmic pounding, a testament to her patience and care.
  3. In a bowl, mix together the ricotta cheese, chopped spinach, half of the mozzarella, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
  4. Spread a few tablespoons of the cheese mixture onto each chicken breast, then roll them up tightly, securing with toothpicks if necessary.
  5. Heat the olive oil in a skillet over medium heat. Sear the chicken rolls until browned on all sides, about 4-5 minutes. This step locks in the flavors and adds a beautiful golden color.
  6. Transfer the chicken rolls to the prepared baking dish. Pour the marinara sauce over the top and sprinkle with the remaining mozzarella cheese.
  7. If desired, add a sprinkle of breadcrumbs for extra texture.
  8. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
  9. Garnish with fresh basil before serving. This aromatic touch will remind you of a lively herb garden in the summer.
