Total Time:45 minutes
Yield:4 servings
Ingredients
4 boneless, skinless chicken breasts
1 cup ricotta cheese
1 cup spinach, chopped
1 cup mozzarella cheese, shredded
1/2 cup Parmesan cheese, grated
1 cup marinara sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1/4 cup fresh basil, chopped (optional)
1/4 cup breadcrumbs (optional for added crunch)
Instructions
Preheat your oven to 375°F (190°C). Grease a baking dish with a little olive oil and set aside.
Place each chicken breast between two sheets of plastic wrap and pound to about 1/4-inch thickness using a meat mallet. This step always reminds me of my abuela’s rhythmic pounding, a testament to her patience and care.
In a bowl, mix together the ricotta cheese, chopped spinach, half of the mozzarella, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.
Spread a few tablespoons of the cheese mixture onto each chicken breast, then roll them up tightly, securing with toothpicks if necessary.
Heat the olive oil in a skillet over medium heat. Sear the chicken rolls until browned on all sides, about 4-5 minutes. This step locks in the flavors and adds a beautiful golden color.
Transfer the chicken rolls to the prepared baking dish. Pour the marinara sauce over the top and sprinkle with the remaining mozzarella cheese.
If desired, add a sprinkle of breadcrumbs for extra texture.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
Garnish with fresh basil before serving. This aromatic touch will remind you of a lively herb garden in the summer.
