- Preheat your oven to 375°F (190°C). Grease a baking dish with a little olive oil to prevent sticking.
- In a large skillet, heat olive oil over medium heat. Add the chicken pieces and cook until they’re golden brown on the outside, about 5-7 minutes. Transfer the chicken to the prepared baking dish.
- In the same skillet, add mushrooms and garlic. Sauté until the mushrooms are soft and the garlic is fragrant, about 3 minutes. Stir in the spinach and cook until wilted.
